  1. Tin? I'm more fond of copper--an excellent cooking material, by the way. You can beat egg whites in a copper bowl and they will remain stiff longer. Personally I think it is advisable to mention portage along with pottage to avoid confusion. I have been told portage has a great etymology, although I'm not too sure about the reliability of my source...
